You’re standing in the kitchen, the water in the kettle is already humming, and suddenly your mind goes blank: How much do I pour? Don’t worry, we’ve all been there. Instead of flipping through thick manuals, use this short cheat sheet to help you master the chaos of your morning brew.


⚖️ 1. Ratios

The specialty golden standard is 6g of coffee for every 100ml of water. This is your base – if the coffee is too strong or too weak, start by adjusting up or down by 0.5g.

⚙️ 2. Grinding and Time

Grind size is your most important flavor "slider." Visually compare the grounds to products from your kitchen cupboard.

💧 3. Water and Temperature

Remember: boiling water is the enemy of sweetness.

  • Water: Always filtered (Brita/Dafi pitcher or spring water).
  • Temperature:
    • Light roast (fruity, citrusy): 93°C – 96°C / 199°F – 205°F (wait about 1 min after boiling).
    • Dark roast (nutty, chocolatey): 88°C – 92°C / 190°F – 198°F (wait about 3 min after boiling).

🔍 4. Quick Flavor Diagnosis

The coffee is in your mug, you take the first sip and... something’s off? Correct it on your next attempt:

What do you taste? Diagnosis Solution
Very sour, salty Under-extracted Grind finer / hotter water
Bitter, dry, ashy Over-extracted Grind coarser / cooler water
Watery, "sad" Not enough coffee Add 1-2g more coffee
Too intense, heavy Too much coffee Use a bit more water (dilute)

💡 Golden rule: Only one variable!

This is the key to success in specialty coffee. If you don't like the coffee, change only one thing at a time (e.g., only the grind size). If you change the grind, temperature, and ratio all at once, you’ll never know what actually fixed the flavor.
